Easy Tortilla Soup (01.24.12)

3 roma tomatoes, halved1/4 small onion4 sprigs of cilantro2 tablespoons chili powder or taco seasoning2 cups hot water1/4 ripe avocado, peeled1/2 large carrot, peeled2 – 1/2″ x 1/2″ cubes jalapeño jack cheese or sharp cheddar, optional1/2 teaspoon garlic salt1/4 teaspoon ground black pepper1/2 cup chicken or turkey, cooked and shredded1/2 can black beans1/2 cup corn15-20 tortilla chips, lightly crumbled1/4 cup sour cream
Add the first 10 ingredients into a Blendtec or regular blender. If using a Blendtec, press “Soups”. If using a blender, turn on medium speed and blend for 3-4 minutes. (Note: slice the carrot into small pieces if using a blender.)

Option 1: Add the chicken or turkey, beans and corn. Press “Pulse” 3-5 times to blend. Serve with tortilla chips and sour cream.

Option 2: Pour the blended mixture into a soup pot. Add the chicken or turkey, beans and corn. Heat through on medium heat for 4-5 minutes. Serve with tortilla chips and sour cream.
